Waitrose (Valdivieso) Cabernet Sauvignon Reserva (2007)

This 2007 Waitrose (Valdivieso) Cabernet Sauvignon Reserva is the result of a partnership between UK supermarket Waitrose and well known Chilean producer Valdivieso. One of Chile’s most respected producers, Valdivieso has a history running back to 1879 when Alberto Valdivieso founded “Champagne Valdivieso” – the first wine company in Chile to produce sparkling wine. It took more than 100 years for Valdivieso to begin production of still wine, although today it is these still wines for which the company is best known.  

The Cabernet Sauvignon fruit destined for this 2007 Waitrose (Valdivieso) Cabernet Sauvignon Reserva is sourced from a selection of vineyards sitting within the Maipo Valley, Chile. Wrapping around and stretching to the south-west of Chile’s capital of Santiago, the Maipo valley produces some of Chile’s best Cabernet Sauvignon. Mainly situated in Chile’s “Central Valley”, here the climate is warm and allows full ripening of the Cabernet Sauvignon grapes destined for this 2007 Waitrose (Valdivieso) Cabernet Sauvignon Reserva in late March and early April.

In the glass, this 2007 Waitrose (Valdivieso) Cabernet Sauvignon Reserva is a deep ruby colour that fades to garnet towards the rim of the wine. Resulting from 12 months oak maturation (70% French oak, 30% American), this discolouration also allows the plentiful alcoholic legs of this 2007 Waitrose (Valdivieso) Cabernet Sauvignon Reserva to be seen when it is swirled.

Aromatically, cassis leads this 2007 Waitrose (Valdivieso) Cabernet Sauvignon Reserva with wood smoke and wisps of menthol also becoming apparent. Expressive (especially once adequately exposed to air), the aromas of this 2007 Waitrose (Valdivieso) Cabernet Sauvignon Reserva are more pronounced than old world (and indeed many Chilean) expressions of Cabernet Sauvignon.

In the mouth, soft and mouth-filling damsons and ripe dark cherries dominate this 2007 Waitrose (Valdivieso) Cabernet Sauvignon Reserva. Oak derived vanilla notes add sweetness, with remarkably well resolved and velvety tannins coating the mouth. Beautifully balanced and richly textured, this 2007 Waitrose (Valdivieso) Cabernet Sauvignon Reserva is a very accomplished Chilean Cabernet Sauvignon.

By all means drink this 2007 Waitrose (Valdivieso) Cabernet Sauvignon Reserva now, however this wine will also develop in bottle over the next five years.

Score: 86/100 – This 2007 Waitrose (Valdivieso) Cabernet Sauvignon Reserva is a fruit-forward and smoothly textured Cabernet Sauvignon. Beautifully balanced now, but with sufficient structure to age, this 2007 Waitrose (Valdivieso) Cabernet Sauvignon Reserva is an impressive wine.

Value for Money: 9/10 – Few Cabernet Sauvignon available at the price of this 2007 Waitrose (Valdivieso) Cabernet Sauvignon Reservae offer such balance or indeed ease of drinking. At this price there are few Chilean Cabernet Sauvignon that are better.
